Another good reason to have window dressing is to block too much sunlight. Some people love to have a kitchen as bright as possible but for others it could get way too bright. You can have blinds if you like to have it very bright at times and very dark. Any window dressing would be sufficient enough to protect from UV rays, it up to you to choose how dark you want the fabric to be.
